100% Pinot Noir sourced from 3 Lieu dits: Bicheret, Les Copies, Val Herard; in Vallée d’arce (Côte du bar). Vinified white from clay/calcercous soil. This is always a wine from a single vintage (2019 = B.19). It is fermented in equal parts Stainless Steel and neutral oak. Dosage is extremely low, max 2g/liter. The Liqueur de tirage is a blend of his own wine and cane sugar and the yeasts used in the secondary fermentation are derived from his own vineyards (rather than commercially bought champagne yeasts). This wine is about precision and about a young winemaker's conversation with his family's historic vineyards and lineage in the world of Champagne.
